Our American Beef

Every single piece of meat is hand selected by Chef Justin. We strive to take the extra steps by ensuring all of our beef is certified to what is mentioned on the menu. We work closely with over 20 farms in the U.SA. to give you the highest quality possible. The lowest grading of meat we use is USDA Prime!!

 

Poultry

When it comes to poultry we don’t mess around! With chicken demand being so high and many companies mass producing low end product, no matter what we don’t support those type of companies/businesses. We work closely with Jidori and Mary’s Chicken to use the freshest chicken. We also have a wide range of special imports such as Blue Poulet from France of Black Silkie from Thailand! Also depending on the season a wide range of game poultry is available such as Pheasant, Quail, Game Hens…

Wagyu- American, Australian, Japanese

When it comes to our Wagyu services no corners are cut. We work directly with farmers to trace the steps of where their product is actually going after harvesting and prrocessing! We check complete bloodlines of the cattle through an extensive bloodline certification to give you only the best. But when it comes to sourcing our wagyu we don’t only look at the cow itself but the commitment the farmers/farms have to ensure the best quality of life for the cattle and the final product once received. We are able to source any cut of beef and any quality needed to satisfy your carnivore cravings!

 

Local Seafood

Growing up in San Diego, Justin has learned the importance of not only supporting local businesses but also showcasing the beautiful seafood California has to offer. Chef Justin hand selects all of the seafood used in his menus. The selection changes daily but upon special request he can source specific seafood that you are serving!

Game Meat

Chef Justin is a strong advocate of sustainability and also loves his platform to help spread awareness on alternative meats! This has not been an easy task but Chef Justin has created the ultimate “Beast Feast” specializing(but not limited to)- Elk, Moose, Venison, Axis Deer etc… These products are globally sourced and go through strict inspection to ensure they are the highest quality and not mass produced! When it comes to seafood we have you covered! We work closely with suppliers ranging from Hawaii all the way to Japan. If you are craving Hokaido Uni or Kona caught Ahi just let us know. We can even fly in Sri Lanka crab if that’s what you want. We have wide range of sources to help track down ingredients for your custom menus!
